You can use plugins like Woo-payments to manage the payments. It also attaches to third party payments like stripe which is easy to integrate. It also has feature to select drop downs and integrate different specifications or sizes. Listing different SKU's is an easy job and also you can use fibo search for better search results. I tried the PRO version for sometime that is great. Also, you can use it with plugin like trackshipment to make sure what are the charges according to product dimensions and weight.
