Will joining someone else's shared folder use my quota ? I'm confused about this

Yes, it will, unless you are using the Business version and are on the same team (the same Business account). If the folder being shared with you is from outside of your organization or you are using the personal version (not a family plan that you are sharing within your family) the contents of the folder will use up your quota.
